Ingredients:

For the Broth:

  • 4 cups beef broth (or water with beef bouillon)
  • 1 onion, halved
  • 1 piece (2-inch) ginger, sliced
  • 1 cinnamon stick
  • 2 star anise
  • 4 cloves
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • Salt to taste

For the Grilled Meat:

  • 1 lb (450g) beef sirloin or rib-eye, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon honey
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground black pepper

For the Pho:

  • 8 oz (225g) rice noodles (bánh phở)
  • Fresh herbs (e.g., basil, cilantro)
  • Bean sprouts
  • Lime wedges
  • Sliced jalapeños or Thai chilies
  • Thinly sliced onions
  • Hoisin sauce
  • Sriracha or chili sauce

Instructions:

1. Prepare the Broth:

  1. In a large pot, bring the beef broth or water to a boil.
  2. Add the halved onion, sliced ginger, cinnamon stick, star anise, and cloves.
  3. Reduce the heat and let it simmer for 10 minutes to infuse the flavors.
  4. Season with fish sauce and sugar, then adjust with salt to taste.
  5. Strain the broth to remove the solid spices and aromatics. Keep the broth warm.

2. Marinate and Grill the Meat:

  1. In a bowl, mix together the soy sauce, fish sauce, honey, vegetable oil, minced garlic, and ground black pepper.
  2. Add the thinly sliced beef and toss to coat evenly. Let it marinate for at least 15 minutes.
  3. Preheat your grill or a grill pan over medium-high heat.
  4. Grill the beef slices for 1-2 minutes per side, or until they are cooked to your liking. Avoid overcooking to keep the meat tender.
  5. Remove the beef from the grill and set aside.

3. Prepare the Rice Noodles:

  1. Cook the rice noodles according to the package instructions, usually by soaking them in hot water until tender.
  2. Drain and rinse the noodles under cold water to prevent sticking.

4. Assemble the Pho:

  1. Divide the cooked rice noodles among bowls.
  2. Top with the grilled beef slices.
  3. Pour the hot broth over the noodles and beef.
  4. Garnish with fresh herbs, bean sprouts, sliced onions, lime wedges, and sliced chilies.
  5. Serve with hoisin sauce and sriracha on the side for added flavor.
