Ingredients:

  • 1 pound pork shoulder or pork loin, thinly sliced
  • 1 package (8 ounces) rice vermicelli noodles
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 shallot, thinly sliced
  • 2 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped peanuts (optional, for garnish)
  • Fresh herbs (such as cilantro, mint, Thai basil), chopped
  • Lettuce leaves or mixed greens
  • Lime wedges

For the marinade:

  • 3 cloves garlic, minced
  • 2 tablespoons lemongrass, finely chopped (optional)
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon sugar
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon black pepper

Instructions:

  1. Marinate the pork: In a bowl, combine the pork slices with all the marinade ingredients. Mix well to ensure the pork is coated evenly. Cover and refrigerate for at least 1 hour, or ideally overnight.
